Guys, this is one of my favorite healthy dessert recipes! The Coconut Cashew Wafer Bars taste like it should be terrible for you …terrible in a good way!! But it’s actually high in protein and has very little sugar in it! As you may know I am dating the wrestler Bad News Barrett (I call him Stu! haha) and one of my passions is finding yummy recipes he can eat and enjoy while maintaining those abs! I filmed this experiment of mine and then I did the BF test and got Stu to rate the recipe out of 10! …Sorry that the camera work and editing isn’t so great…It was my first try! But hopefully you enjoy it and want to try it because trust me your taste buds will be happy!!
So today’s recipe is “Cashew Coconut Wafer Bars” I saw a recipe on the quest.com blog for “Quest Wafer Bites” and I thought I’d give it my own little twist!
So here are the steps
1) Take a Quest Coconut Cashew Quest Bar and roll it out into a thin dough
2 ) Cut the dough into long triangles (almost make it look like a twix bar)
3 ) Put the long triangles into the oven for 3 minutes at 350 degrees
4 ) Then make the filling! Mix natural cashew butter with unsweetened coconut and hemp hearts all together.
5 ) After you take the quest bar strips out of the oven they will become “cookie-like” — Let them cool down for 5 minutes.
6 ) After 5 minutes take your cashew mixture and lay some on top of one cookie part and cover it with another cookie part…like a sandwich!
7 ) Then the yummiest part! Warm up a handful of sugar-free chocolate chips (My Favorite are Krisda Chocolate Chips) in the microwave for 20 seconds then begin to coat the entire outside of the bar (as well as the sides)
8 ) Before the chocolate dries you can sprinkle some extra unsweetened coconut on top to make it look pretty.
9 ) Once this is finished put it in the fridge or freezer until the chocolate hardens.
10) Once this is all done it’s all about presentation!! Grab some coconut whipped cream (dairy free and low in sugar woo!) and put that on the side for your guests to dip into. It will only accentuate the coconut flavours already in the cookie!
